Food & Drink Paring

Play of flavors: with food pairing to the perfect taste experience.
​The taste buds of the tongue can only perceive the five different tastes sweet, salty, sour, bitter and umami. Sweets are only recorded in large quantities, but can enhance other tastes. The ultimate flavor enhancer is of course salt - and it also whets the appetite (keyword: salted peanuts or chips!). Bitterness also stimulates the appetite, but it also adds freshness to dishes and can balance out sweetness. Unlike sugar, bitter foods can be detected by the tongue in very small amounts - an ancient survival mechanism of our ancestors. Acid is the number two flavor enhancer, right after salt. Similar to bitterness, it has a refreshing effect. Umami is the fifth taste and something special. And that's not just because the term comes from Japanese and means something like "tasty". Gorgonzola, anchovies, mushrooms or glutamate taste "umami", i.e. hearty or meaty. The more balanced the individual components are in a dish, the "rounder" the taste.

Simple Pairings

Burger & Wine

Be it white wine or red wine - the basic rule is: the wine with a burger can have a little more oomph. Of course, it shouldn't be too dominant and shouldn't overshadow the burger, but complement it. If you decide on a red wine, we recommend a smoky drop that has been aged in wood. If you would like to drink a white wine with your burger, we suggest an intense Chardonnay or Riesling.

Fish & Beer

When pairing fish and beer, pay attention to hop bitterness. The fat in fish doesn't go well with the bitterness of beer. Therefore, priority must be given to light, malty beers. Incidentally, in many countries beer is often combined with mussels. A stout and oysters or a Belgian gueuze with moules open up new worlds of taste.

Cheese & Gin

Gin is quite a special and very interesting drink, and it is hard to imagine, but cheese also goes very well with it. Above all, strong, strong and long-matured cheeses offer a wonderful contrast here. Everyone is free to serve the cheese neat, with crackers, or on small rolls, for example. Every variant is really delicious here. The classic combination of cheese and grapes is also an option, as described above, fruit is also a great combination with gin and tonic.
